Tater Tot Casserole

Tater tot casserole is a quick and fun dinner idea for a busy household.


Saucy ground beef with peas and sweet corn kernels topped with a layer of crisp and golden tater tots. An easy and fun meal for the whole family.


I don't often buy processed foods like tater tots, but sometimes the time savings is worth it if used to create a satisfying meal. It's also a little touch of fun for the youngest in the family to have a recognizable favourite on their plates.


This is a very simple dish that can be easily altered to include more vegetables. Try adding some broccoli or cauliflower with, or instead of, the peas and corn. The addition of sautéed mushrooms is also a lovely flavour addition, just sauté the sliced mushrooms at the same time as the onion.


This recipe can easily become a family favourite you can turn to any time.

 

Ingredients

(Makes 8 servings)

  • 1/2 tablespoon extra-virgin olive oil

  • 1/2 medium sweet onion, diced

  • 1/2 teaspoon sea salt

  • 2 cloves garlic, minced

  • 1, 1/2lb ground beef

  • 1 teaspoon dried parsley

  • 1/2 teaspoon paprika

  • 1/4 teaspoon ground black pepper

  • 2 tablespoons corn starch

  • 1 cup low-sodium chicken broth

  • 1 cup sharp white cheddar, grated

  • 1 heaping cup frozen green peas

  • 1 heaping cup frozen peaches and cream corn kernels

  • 1 small bag tater tots, frozen

  • fresh parsley to garnish (optional)

 

Directions

Preheat oven to 425°F / 220°C and set aside a 9-inch x 13-inch casserole dish.


In a large sauté pan over medium-high heat, add the extra-virgin olive oil. Once the oil is hot, add the diced onion and sea salt. Sauté until the onion becomes soft and translucent (about 6 to 8 minutes). Add the minced garlic and continue to sauté for an additional minute before adding the ground beef. Mix well with the onion mixture, breaking up any lumps of meat. Add the dried parsley, paprika, and ground black pepper and continue sautéing until the beef is brown and there are no large clumps of meat remaining (8 to 10 minutes). Mix in the corn starch until well combined. Add the chicken broth, mix well, and bring to a boil. Reduce heat to medium and simmer for a few minutes until the meat and broth thicken. Add the white cheddar (reserving a little to sprinkle on top), peas, and corn, mixing well.


Transfer the meat to the casserole dish and press into a flat, even layer.Top with a neat layer of tater tots. Sprinkle the tops of the tater tots with the reserved cheddar and bake for 30 minutes or until the tater tots are golden and cooked.


Serve with (optional) garnish of fresh chopped parsley.
