Berry Bruschetta

The perfect appetizer for spring gatherings, this berry bruschetta is easy and delicious!


Medallions of toasted bread slathered in goat cheese and topped with plump, fresh berries then drizzled with honey. Fresh and sweet with wonderfully creamy goat cheese these make the perfect appetizer or snack when friends and family have come calling.


I love how these taste, but also how easy they are to make. Six ingredients and less than 30 minutes to produce a platter of these jewel-like treats. I never have leftovers of these once they hit the snack table. Feel free to use your favourite berries or those in season.


These can be made vegan by using a vegan soft cheese and swapping the honey for bee-free honey or other vegan alternative.


Enjoy these alongside a sparkling white wine, or sparkling fruit wine. Great for spring gatherings, but delicious all year long.

 

Ingredients

(Makes 12 servings)

  • 1, 6-inch piece baguette, sliced into 12, 1/2-inch medallions, no ends

  • 1/4 cup extra-virgin olive oil

  • 1 cup goat cheese

  • 30 fresh blackberries

  • 20 fresh raspberries

  • 1/4 cup honey (or bee-free honee)

  • fresh mint leaves to garnish (optional)

 

Directions

Preheat the oven to 400°F / 200°C and line a sheet pan with parchment paper or silicon liner. Set aside.


Lightly brush both sides of each baguette medallion with extra-virgin olive oil and place them on the sheet pan. Toast in the oven until crisp and golden, but not burnt. Check after 4 minutes, flip and toast an additional minute or two before removing from the oven. Set aside until they are cool enough to handle (about 5 minutes).


Spread each medallion with goat cheese and top with a mix of blackberries and raspberries. (Optional) Garnish each with a small mint leaf.


Just before serving, drizzle with honey.
