California Sushi Bites

The perfect little appetizer, these California sushi bites are reminiscent of the sushi rolls they are named after.


Don't feel like fighting with a sushi mat? Looking for a great appetizer or snack? Look no further than my California sushi bites. Crabmeat, flavourful rice, and avocado arranged on a crunchy cucumber coin reminiscent of a California roll.


These sushi bites make great appetizers, but I love to prep these for snacks as well. These are a hit at any party and will definitely make an appearance on New Year's Eve.


Perfect for pescatarians or anyone who loves a flavourful snack.

 

Ingredients

(Makes 12 servings)

  • 1 medium cucumber, cut into 1/4-inch rounds (24 slices in total)

  • 1/2 avocado, sliced thinly

  • juice of 1 lime

  • 1/4 teaspoon ground black pepper

  • 1 can (120g) chunk crabmeat, with liquids from can

  • 1 cup Calrose rice, prepared

  • 1/4 cup rice vinegar

  • 1/4 teaspoon sea salt

  • 1 tablespoon monk fruit sweetener (or granulated sugar)

  • 1, 1/2 tablespoons tamari + additional for serving (or low sodium soy sauce)

  • 1 teaspoon wasabi

  • sesame seeds (optional garnish)

 

Directions

Prepare Calrose rice according to package instructions. When cooked, transfer to a mixing bowl and set aside.


In a small saucepan over medium-high heat, add the rice vinegar, salt, and sweetener. Whisk until the salt and sweetener are dissolved. Remove from heat and pour over the rice, folding it in gently with spatula. Try not to mush the rice while mixing. Set aside to cool. It is ready once the rice cools to room temperature.


Arrange cucumber slices on a serving board or tray.


Place the sliced avocado in a bowl and pour over lime juice, then sprinkle with ground black pepper. Break off pieces of the sliced avocado and arrange on top of each cucumber slice.


Into the mixing bowl with the cooled rice, add the crabmeat and juice from the can. Use a fork to break up the crabmeat. Add the tamari and wasabi. Mix until very well combined. Taste for seasoning and add additional tamari and wasabi to taste.


Using a small scoop, add a ball of the crab and rice mixture to the top of each cucumber round. Garnish with sesame seeds (optional) and serve with additional tamari as an appetizer or snack.
