Barbecued Fruit Kabobs

Try barbecued fruit kabobs for a sweet, smoky, and juicy summer treat.

Fresh fruits taste even better after spending a few minutes over an open flame. The charring and mild smoky flavour helps to bring out the fruit's natural sweetness while the heat helps release the juiciness. This a great outdoor snack or dessert.

The avocado oil is flavourless, and along with the maple syrup, will help the fruit char better on the grill. Just remember to keep an eye on them, turning to char them on all sides.

Any type of fruit can be used for these grilled skewers. Try them with banana, cantaloupe, honey dew melon, or other favourites.

I like to serve these yummy skewers with some crumbled feta cheese, but goat cheese also works. Other alternatives are plain or flavoured yogurts for dipping.

Ingredients

(Makes 6 servings)

  • 1 small seedless watermelon, rind removed, cut into large 1-inch chunks

  • 1/2 whole pineapple, cored, cleaned, and cut into large 1-inch chunks

  • 1 tablespoon avocado oil

  • 1 tablespoon pure maple syrup

  • feta cheese, crumbled (optional)

Directions

Heat an outdoor grill to medium-high, or an indoor smokeless grill to high. A grilling pan can also be used to prepare this recipe on the stovetop over medium-high heat.

Hydrate the skewers to prevent burning by soaking them in a bowl of water for 15 to 20 minutes before grilling.

Clean and cut the fruit into large 1-inch chunks then thread them onto the skewers, alternating between the watermelon and pineapple. With a pastry brush, lightly coat the fruit on all sides with avocado oil then drizzle with maple syrup.

Grill for 10 to 12 minutes, turning regularly, until the fruit is soft and charred. Serve immediately with crumbled feta (optional).
