Stars & Stripes Toast

Stars and stripes toast is a totally cute and patriotic way to start the day any 4th of July.


Simple yet adorable stars and stripes toast are quick and easy to make, yet loads of fun any 4th of July. Take your favourite red jam (like raspberry or strawberry), a little cream cheese, blueberries for stars and bananas for the stripes. All on your favourite morning toast.


I call for white bread in this recipe, but really it can be any kind of bread including gluten-free. Otherwise, these toasts are suitable for ovo-lacto vegetarians. To make this recipe vegan, swap the cream cheese for a dairy-free whipped topping of your choice.


If you have some fresh strawberries or raspberries on hand, they are easy to turn into a compote or spread for this recipe instead of using store-bought. Just add a little water to a saucepan along with your fresh berries, a squeeze of fresh lemon juice, maple syrup to taste, and a tablespoon of chia seeds or flaxseed meal to thicken it up.

 

Ingredients

(Makes 2 servings)

  • 2 slices white bread, toasted (gluten-free if required)

  • 2 tablespoons sugar-free strawberry jam (or raspberry)

  • 1 large banana, sliced and slices halved

  • 2 tablespoons whipped, light cream cheese

  • 18 blueberries

 

Directions

Toast your favourite bread. Spread with jam. Add the cream cheese to the upper left corner in a square smaller than a quarter of the area of the bread, then arrange the blueberries on the cream cheese on three rows of three blueberries.


Cut banana into 1/8-inch slices then cut slices in half. Line up the straight, cut edge of the banana slices and arrange into four rows of overlapping slices to create the stripes. Enjoy!
