Peach & Cream Cheese Toasts
A simple and delicious breakfast of fresh summer peach and cream cheese toasts.
When peaches are in season, I like to find ways to work them into all sorts of meals. After all, there is no better time to enjoy all that fresh, juicy sweetness. Enter my peach and cream cheese breakfast toasts.
Toasted bread, a smear of cream cheese, sliced ripe peaches, and a drizzle of honey with an optional sprinkle of fresh thyme for a delightful hint of herb goodness. It's a simple meal to pull together and a delightful way to start the day.
Suitable for ovo-lacto vegetarians (honey optional) and use your favourite gluten-free bread if needed. Vegans try this recipe with dairy-free cream cheese and bee-free honey.
Ingredients
(Makes 4 servings)
4 slices bread, toasted (used here, white Italian style)
1/2 cup light whipped cream cheese
2 peaches, sliced
1 tablespoon honey
fresh thyme (optional)
Directions
Toast the bread and assemble the toasts starting with the cream cheese, then sliced peaches, drizzle of honey and sprinkle of fresh thyme (optional). Enjoy!
