Grilled Peach Salad

Delectable grilled peach salad recipe drizzled with a champagne vinaigrette your family will rave about.


This salad is a peach lover's dream. Sweet peaches grilled to bring out their delicious flavour and drizzled with a simple, yet decadent, champagne vinaigrette. All accompanied by creamy goat cheese and crunchy walnuts. This grilled peach salad makes a wonderful lunch, or smaller portion for an appetizer, and it's a great way to serve in-season peaches.


For those who dislike goat cheese, this can be substituted with light feta, and an alternative to walnuts are pecans.


This salad is great for those following an ovo-lacto vegetarian, or gluten-free, diet.

 

Ingredients

(Makes 4 servings)

  • 8 small peaches, halved, pitted and grilled

  • 4 cups baby spinach

  • 1/2 cup goat cheese

  • 1/2 cup walnuts, halved

champagne vinaigrette:

  • 1/2 cup extra virgin olive oil

  • 1/4 cup champagne vinegar

  • 2 tablespoons maple syrup

  • 1/2 small shallot, finely minced

  • 1/2 teaspoon Dijon mustard

  • salt and ground black pepper to taste

 

Directions

In a container with an airtight lid, add the ingredients for the champagne vinaigrette. Close the lid and shake vigorously until the ingredients are combined and the extra virgin olive oil emulsifies. Alternately, prepare using a small blender. Set aside.


Heat a grill pan, indoor smokeless grill, or barbecue, to medium-high heat. Wash the peaches very well, removing any residual stems. Halve the peaches and remove the stone from each.


Once the grill is up to heat, brush the cut side of each peach with a light coating of the champagne vinaigrette then place facedown on the grill. If using a barbecue, avoid placing the peaches over the hottest flames. Grill the peaches until heated through and softened, turning to the skinned side at approximately the 10-minute mark. The time it takes for the peaches to be ready will directly depend on the type of grill used and heat. Monitor constantly to avoid burning or overcooking. Remove from grill and set aside.


This salad is assembled per plate. Equally divide the spinach, walnuts, goat cheese and peach halves across 4 plates and drizzle with champagne vinaigrette. Enjoy!
