Greek Baked Salmon

Wonderful flavours are imbued in this light and delicious Greek baked salmon.


Fresh vegetables, olives, and marinated feta cheese topping flaky oven-roasted salmon. All the flavours of the Mediterranean come together in this light and delicious Greek baked salmon.


For this recipe, I use my own version of a Greek spice mix. If you don't have all the ingredients to make it, or can't find all the ingredients, you can substitute for a store brand of Greek spice mix, or use a combination of garlic flakes, onion flakes, dried oregano, sea salt, and ground black pepper.


This recipe is great for pescatarians and salmon lovers of all kinds. It's simple to make and those flavours really shine through.

 

Ingredients

(Makes 4 servings)

salmon:

  • 1 large lemon, thinly sliced

  • 1 small red onion, thinly sliced

  • 4 (4oz ea.) salmon fillets

  • 2 tablespoons Greek spice mix

Greek salad topping:

  • 1/4 cup extra-virgin olive oil

  • 1/4 cup lemon juice

  • 2 cloves garlic, minced

  • 1 teaspoon dried oregano

  • 1/4 teaspoon ground black pepper

  • 1/4 teaspoon red pepper flakes

  • 1 cup light feta, drained if in brine, roughly crumbled

  • 24 cherry tomatoes, halved

  • 12 kalamata olives, pitted

  • 1 medium field cucumber, chopped

  • 1 sweet red pepper, deseeded and chopped

  • 1/2 small red onion, diced

 

Directions

Preheat oven to 375°F / 180°C and prepare a large casserole dish by lining the bottom with lemon and red onion slices. Set aside.


In a large mixing bowl, whisk together the olive oil, lemon juice, garlic, oregano, ground black pepper, and dried red pepper flakes. Add the feta to the bowl, toss, then cover and refrigerate for about 15 minutes.


As the feta marinates, place the salmon fillets skin-side down on top of the sliced lemon and red onion. Sprinkle the salmon with Greek spice mix then roast until the fish is flaky and opaque (about 20 minutes).


While the fish finishes cooking, add the cherry tomatoes, olives, cucumber, sweet red pepper, and red onion to the bowl with the feta and gently toss.


Remove salmon from oven and top with Greek salad mixture just before serving.
