Ginger Pony Cocktail

For a spirited, yet casual cocktail, try my Ginger Pony Cocktail recipe.


Oddly enough, I've found myself in situations where I have to cobble together a cocktail using whatever I had on hand. The cocktails that worked out particularly well, I keep in my little black mixology book for future reference. This ginger cocktail happens to be one of my favourites.


It is bubbly and smooth, and just sweet enough without being cloying. It's the type of cocktail that is perfect to enjoy out on a cottage deck, or fancied up for a celebration.


There are actually two ways to make this drink, the easy way and the hard way. The easy way is detailed below, but the San Pellegrino can be replaced with equal parts black cherry juice and pomegranate juice. Reduce the combined juice amount to 1/4 cup and increase the amount of ginger ale.


This can be garnished with lime and lemon slices, cherries, pomegranate arils, or cubes of candied ginger.

 

TIP: To make this non-alcoholic, just omit the vodka. the ginger ale and San Pellegrino taste great together on their own.

 

Ingredients

(Makes 1 serving)

  • 1/2 cup ginger ale

  • 1/2 cup San Pellegrino Black Cherry & Pomegranate flavour

  • 1 ounce vodka

 

Directions

In a tumbler or highball glass, combine all the ingredients with ice. Stir, garnish, and serve.
