Dalgona Coffee

If you want to try the trendiest coffee experience, this Dalgona coffee recipe in just what you're looking for.


When this Korean coffee technique hit Tik Tok it pretty much exploded across the planet. Everyone wanted to try to make this incredibly cool, whipped iced coffee. The great thing is, it's really easy to make. It just takes a little elbow grease (or a hand mixer) to get the coffee whipped nice and thick.


Though this recipe is close to the original, I have seen the same technique used with matcha tea, hot chocolate, and other flavoured and coloured powder mixes. Some have better results than others and require the use of whipping cream (plus vanilla and extra sugar), or whipped egg whites prepared over a bain-marie, instead of water alone. Coffee has a natural tendency to produce foam (crema) and thus when it's mixed with sugar it stabilizes and whips up quite easily. Other powders don't have that same ability.


It's easy to adjust the amount of topping you make. The key is equal parts sugar, water, and instant coffee. The base is ice and the milk of your choice. I indicate 1 cup of cashew milk here for 2 servings just to estimate calories, but you only need to fill a glass about 3/4 full with ice and milk, leaving room for all that whipped coffee goodness.

 

TIP: If you want to lower the fat content, use your favourite low fat milk.

 

Ingredients

(Makes 2 servings)

  • 2 tablespoons demerara sugar (or white granulated sugar)

  • 2 tablespoons instant coffee (ensure you use gluten-free if necessary)

  • 2 tablespoons hot water

Serve over:

  • ice

  • 1 cup cashew milk (or the milk of your choice)

 

Directions

In a medium mixing bowl, add the sugar, instant coffee, and water. Give the sugar and instant coffee a few moments to start dissolving then whisk with either a manual whisk, a hand mixer, or immersion blender, until it becomes thick and holds stiff foamy peaks. If doing this by hand, it can take over 10 minutes of vigorous whipping to obtain this result.


Fill a tumbler about 3/4 full with ice and the milk of your choice, then spoon the whipped coffee onto the top. Mix the coffee into the milk as you drink and enjoy!
