Chocolate Chip Waffles

Decadent chocolate chip waffles make any day special.


Decadent breakfasts have a way of making the whole day sunny even if it's raining outside. While we really shouldn't do that every day, once in a while a morning just needs a special kick to set the day right. One excellent choice are these chocolate chip waffles.


These are just a simple, dairy-free waffle with a slightly tangy undertone that helps to balance the sweetness of the chocolate chips. It uses the reaction between the yogurt, baking powder, and baking soda to bake up fluffy. Suitable for ovo-lacto vegetarians.


A waffle iron is needed, of course, but whether it's Belgian-style (my preference) or not, just make sure you refer to the manufacturer's instruction for your specific waffle iron when making these to ensure they don't undercook or overcook.

 

Ingredients

(Makes 8 servings)

  • 1/2 cup plant-based butter

  • 1, 1/2 cups almond milk (or other non-dairy/dairy milk)

  • 1 teaspoon pure vanilla extract

  • 2 cups unbleached all-purpose flour

  • 1 tablespoon baking powder

  • 1 teaspoon baking soda

  • 1/2 teaspoon sea salt

  • 1 tablespoon monk fruit sweetener (or granulated sugar)

  • 2 large eggs

  • 1/4 cup almond yogurt (or other plain non-dairy/dairy yogurt)

  • 1/2 cup semi-sweet mini chocolate chips (plus more to sprinkle on top: optional)

 

Directions

In a saucepan over medium heat, add the butter and milk and heat until the butter is melted. Remove from heat and stir in the pure vanilla extract. Set aside to cool.


In a medium mixing bowl, sift together the flour, baking powder, baking soda, salt, and sweetener. Set aside.


Add the eggs to a large mixing bowl, and using an electric hand mixer on high, beat the eggs until they become fluffy. Switching to a spatula, slowly pour in the milk mixture and combine. Add the yogurt and combine. Add the dry ingredients and stir until just combined. Set aside for 5 to 7 minutes.


Heat a waffle iron (use temperature recommended by manufacturer).


Stir the chocolate chips into the batter then cook waffles according to manufacturer recommended cooking times (usually about 4 to 5 minutes).


Serve hot, sprinkled with additional chocolate chips (optional). Other optional toppings include fresh fruit, powdered sugar, pat of butter, chocolate hazelnut spread, or pure maple syrup.
