Blueberry Foo Foo

Light and fluffy blueberry foo foo recipe that makes a wonderful cool and fruity dessert on a hot summer day.


Incredibly light and airy, this fruity summertime dessert makes the perfect treat at the end of a family barbecue or picnic. The whipped base holds each fresh blueberry aloft in a cloud of sweet, creamy goodness.


I like to top each bowl with additional fresh blueberries and some crumbled waffle biscuit, but this is of course completely optional.


This dessert can be enjoyed any time blueberries are in season. If blueberries aren't your favourite, they can be swapped out for any berry that doesn't release too much juice, like uncut raspberries and blackberries, though the amount of larger berries used will need to be adjusted as needed.


I think your family will agree, this makes a wonderful sweet treat.

 

TIP: Vanilla extract, or other flavoured extracts, can be used to adjust the flavour for a different twist.


TIP: Test the acidity, and add more lemon juice if needed.

 

Ingredients

(Makes 16 servings)

  • 4 oz light cream cheese

  • 1/2 cup light sour cream

  • 1 cup powdered sugar sifted

  • 1/2 teaspoon lemon juice

  • 8 oz light whipped cream topping

  • 6 cups fresh blueberries

 

Directions

In a large bowl, cream together the cream cheese, sour cream, powdered sugar, and lemon juice until combined and smooth.


Fold in whipped topping and blueberries gently.


Chill and serve!
