Baked Chicken & Fennel
Looking for a delicious way make chicken? Try this honey orange baked chicken and fennel recipe.
For anyone who has not tried fennel, it has a mildly liquorice flavour that goes quite well with most types of meats. When paired with this honey-orange chicken and potatoes, it adds a delectable depth to the flavour.
Almost the entire fennel bulb is edible, with the exception of the bottom where the roots would have been connected. It's leaves can be used as garnish, or added to a salad, and the stalks can be used in this dish as well (see tip below for more information).
To prep the fennel, slice off the bottom along with the stocks and greens. If the outer layer is particularly banged up, you can remove this as well.
TIP: If you have very young, fresh fennel, the stalks can be included in this recipe. The stalks of older fennel tend to be dry inside.
TIP: The fennel greens can be reserved as a garnish for this recipe, or added to a salad to introduce a mild liquorish flavour.
Ingredients
(Makes 6 servings)
6 chicken drumsticks, without skin
1 cup vegetable stock
2 oranges, 1 juiced, 1 sliced crosswise into 1/4-inch rounds and cut in half
1/2 cup honey
1 clove garlic
3 fennel, cleaned and cut into quarters
3 white or yellow potatoes, peeled and quartered
pinch salt and black pepper
Directions
In a mixing bowl, add the vegetable stock, orange juice, honey and garlic. Whisk until the honey is dissolved. Add the chicken drumsticks, cover and let marinade in the refrigerator for one hour.
Preheat oven to 425°F / 220°C.
In a casserole dish, combine the quartered fennel and potatoes. Nestle the chicken drumsticks in with the vegetables and pour the marinade over the entire dish. Layer orange slices throughout the dish then cover and bake for 45 minutes, or until the chicken is done and the fennel and potatoes are tender. For the last 15 minutes, uncover the dish and push the orange slices aside to allow the chicken and vegetables to brown.
