Turkey Cabbage Wraps

Turkey cabbage wraps are a healthy way to enjoy leftover turkey from the holidays.


Tender, roasted turkey strips nestled onto a cabbage leaf with pan roasted onion and sweet pepper, sprinkled with pepitas and an orange tamari dressing.


An excellent, low-calorie way to enjoy those leftover turkey pieces from the holidays.


If the cabbage leaf is a bit too tough to enjoy this wrap, substituting it with a lettuce leaf is an acceptable replacement. I'd recommend using a double leaf of butter lettuce to better hold the sautéed peppers.


Using a cabbage leaf or lettuce leaves naturally makes these wraps gluten-free.


Feel free to add any other leftovers to the wraps, like leftover veggies or stuffing. Just give them a quick sauté along with the peppers to heat them up.

 

Ingredients

(Makes 4 servings)


wraps:

  • 1 tablespoon avocado oil

  • 1 large sweet onion, sliced

  • 1 sweet red bell pepper, deseeded and sliced

  • 1 sweet yellow bell pepper, deseeded and sliced

  • 1 sweet green bell pepper, deseeded and sliced

  • 4 slices roasted turkey, cut into strips

  • 4 green cabbage leaves, trimmed

  • pepitas (optional)

dressing:

  • 1/4 cup orange juice

  • 1/4 cup apple cider vinegar

  • 2 tablespoons low-sodium tamari sauce

  • 1 tablespoon sesame seeds

  • 1 tablespoon honey

  • 1 teaspoon fresh ginger, peeled and grated

 

Directions

In a sauté pan over medium-high heat, add the avocado oil. When the oil is hot, add the onion, and sweet bell pepper slices. Sauté until the onion and peppers are soft (about 15 to 20 minutes). Transfer to a serving plate and set aside.


In a small bowl whisk together the orange juice, apple cider vinegar, tamari, sesame seeds, honey, and grated ginger. Set aside.


Into each cabbage leaf, add some turkey slices, onion and sweet peppers, a sprinkling of pepitas (optional), then drizzle with a little of the orange tamari dressing.


Serve immediately and enjoy.
