Pumpkin Spice Latte
This homemade pumpkin spice latte recipe is so tasty you may never want store-bought again!
If you crave the taste of those pumpkin spice lattes from your local coffee shop, just wait until you try this recipe. It's so pumpkin flavoured and creamy, and doesn't depend on artificial syrups to emulate everyone's favourite autumn gourd. Plus, it will save you loads of money!
It is great to just whip up a batch anytime and know exactly what's going into this autumn treat. Those café versions have so much hidden sugar and calories no one needs or wants. Not to mention the line-ups just to get one and seasonal menu restrictions. When I get a craving (any time of year) for that delicious pumpkin taste I happily head to the kitchen instead of the car.
This latte is vegan, dairy-free, and sugar free. Try it iced in the summer for a special treat that will transport you to the cooler months ahead. Just remember to use pure pumpkin purée and not pumpkin pie filling as the two are not the same.
Ingredients
(Makes 2 servings)
1/2 cup cashew milk (or other dairy or non-dairy milk)
1/2 cup medium roast coffee, black, hot
1/2 cup pure pumpkin purée
1/3 banana
1/4 teaspoon pumpkin pie spice
Directions
In a bender combine the milk, coffee, pumpkin purée, banana, and spice. Blend until thoroughly combined.
Transfer pumpkin mixture into a small saucepan over medium heat and warm until steaming but not boiling. Serve in mugs. Optional: Top with coconut cream or whipped cream.
