Tender, flavourful chili chicken and apple skewers make a fun, fast dinner any night.
Plump pieces of chicken infused with garlic, ginger, red chilies, and Asian flavours cooked alongside sweet apple chunks until tender and delicious. These chicken and apple skewers are an easy and fun dinner
idea any night.
In the summer I love to put these on the grill over high heat. It adds a smoky flavour that can't be beat. If grilling or the oven are not options, this dish can be made in a frying pan or wok. Just cook until the chicken is thoroughly cooked, and the apple chunks are tender.
Rice is a natural side dish for this recipe; however, noodles will work quite well too. If you want to keep the carbs down, stir-fry some broccoli, cauliflower, sweet peas, carrot, and other veggies for a healthy side instead.
TIP: This marinated chicken can be made ahead of time and frozen until needed saving loads of time. Just thaw and cook as instructed. The Stasher bags work really well for this.
(Makes 6 servings)
2 tablespoons tamari
2 tablespoons rice wine vinegar
1 tablespoon honey
1/2 tablespoon sesame oil
2 red chili pepper, deseeded and finely chopped
2 cloves garlic, minced
1/2-inch piece fresh ginger, peeled and minced
1/2 cup fresh parsley, finely chopped
1/2 teaspoon sea salt
1/4 teaspoon ground black pepper
4 skinless boneless chicken breasts, cubed into 24 pieces
2 large apples, peeled, cored, and cubed into 18 pieces
6 bamboo skewers, soaked in water
In a small bowl, whisk together the marinade ingredients.
Place the cubed chicken into an airtight glass container, or reusable silicone Stasher bag. Pour the marinade over the chicken. Massage the marinade into the chicken chunks with clean hands to ensure all sies of the chicken are coated. Seal and store in the refrigerator for two hours.
Soak bamboo skewers in water while the chicken marinates.
Preheat oven to 425°F / 220°C and prepare a sheet pan by lining it with parchment paper or silicone liner. Set aside.
Onto each skewer thread on 4 pieces of chicken and 3 pieces apple, alternating from one to the other. Place the skewers onto the sheet pan and drizzle with the remaining marinade. Cook for 20 minutes or until the chicken is cooked through and the apple chunks are tender. Serve immediately with your favourite sides.
